Chicken Chow Mein

Serves 4

Ingredients:

For the marinade:

1tablespooncornflour
4tablespoonlight soy sauce
1-2tablespoonrice wine or medium dry sherry
2tablespoonrice or cider vinegar
1tablespoonsesame oil
2tablespoonclear honey

For the stir fry:

4breastchicken cut into strips
1250gpacket medium egg noodles
2tablespoonsesame oil
1wholered chilli finely chopped
2clovesgarlic
1inchroot ginger, grated
1wholecarrot thinly sliced
1wholecourgette thinly sliced
1eachcolour pepper cut into strips
8ouncesbroccli
4ouncesmangetout

Method:

Mix up the marinade and stir in the chicken, leave for an hour or so.
Cook noodles in boiling water for 3 to 5 minutes and drain.
Heat the seame oil over a very high heat. Add chicken, saving marinade for later. Cook for 4 minutes.
Add chilli, garlic and ginger, stir fry for 2 to 3 minutes.
Add vegetable except mangetout and stir fry, on medium heat, for 5 to 8 minutes.
Add noodles and mangetout and cook on high for 1 to 2 minutes until thick and bubbling.
Variation: You really can't get this wrong. Save the softest veg until last, don't worry about the noodles, if you don't want them and go mad...
