Chicken Chow Mein |

Ingredients:

For the marinade: |
1 | tablespoon | cornflour |
4 | tablespoon | light soy sauce |
1-2 | tablespoon | rice wine or medium dry sherry |
2 | tablespoon | rice or cider vinegar |
1 | tablespoon | sesame oil |
2 | tablespoon | clear honey |
For the stir fry: |
4 | breast | chicken cut into strips |
1 | 250g | packet medium egg noodles |
2 | tablespoon | sesame oil |
1 | whole | red chilli finely chopped |
2 | cloves | garlic |
1 | inch | root ginger, grated |
1 | whole | carrot thinly sliced |
1 | whole | courgette thinly sliced |
1 | each | colour pepper cut into strips |
8 | ounces | broccli |
4 | ounces | mangetout |

Method: |
Mix up the marinade and stir in the chicken, leave for an hour or so. |
Cook noodles in boiling water for 3 to 5 minutes and drain. |
Heat the seame oil over a very high heat. Add chicken, saving marinade for later. Cook for 4 minutes. |
Add chilli, garlic and ginger, stir fry for 2 to 3 minutes. |
Add vegetable except mangetout and stir fry, on medium heat, for 5 to 8 minutes. |
Add noodles and mangetout and cook on high for 1 to 2 minutes until thick and bubbling. |
Variation: You really can't get this wrong. Save the softest veg until last, don't worry about the noodles, if you don't want them and go mad... |
